4th of July Menu
Having a backyard cookout, or looking for the perfect picnic menu to have while you watch the fireworks? We came up with a menu to keep you feeling red white and blue all day long.
What better way to start your meal than with some refreshing Watermelon, Mint, Feta, and Blueberry Skewers! These are sure to keep you cool and refreshed all throughout the day. And they are easy to make, too.
Here’s what you’ll need: Watermelon, cut into cubes. Feta, also cubed. Blueberries, washed. And Mint leaves. Then, all you have to do is put a toothpick through the four ingredients, folding the mint leaves in half. A slightly less patriotic version (Only two official colors?! on Independence day?) but equally as tasty, would be to leave the blueberries off, and instead drizzle on some balsamic glaze.
Now we need something a little more salty. This popcorn will go perfectly as a firework show snack, or you can munch on it all day long.
All you need is popcorn, butter or olive oil, salt, dried blueberries, and dried cranberries. The crunch of the popcorn and the chewiness of the dried berries will add to the awe of the lights in the sky.
This next recipe is a no brainer: easy to transport, great looking, and delicious. Pesto Pasta Salad, served in a jar, and with all your favorite ingredients.
Cook your pasta (penne holds the best), let it cool, and then add your favorite pesto sauce. Once cooled, mix the pasta with your favorite ingredients, and then portion it out into jars. We like adding tomatoes and feta, but some other ideas are olives and mushrooms, fresh basil and sun-dried tomatoes, or, just use whatever you have in the fridge!
Finally, we know that most of you probably already have your drink of choice. But what about adding some extra color with these berry ice cubes?
All you need is some large ice cube trays and your favorite fruit (Blackberries, blueberries, raspberries, or even pomegranate seeds). Put them in to the kids lemonade, or use them to cool down and beautify your vodka or tequila soda. Freeze them for a few hours before use, and your drinks will be delicious and stunning.
